A delicious flavored rice made with soya chunks.

Ingredients
Basmati rice :- 250 grms
Water :- 250 ml
Soya chunks :- 20-30 nos
Salt :- 3 tsp
Onions :- 1 large
Oil :- 2 tbsp
Bay leaf :- 1
Jeera (cumin) :- 2 tsp
Cloves :- 5-6
Black pepper :- 10
Cinnamon :- 1 (1-inch long)
Green chilly - 2 nos
Fresh green peas :- 100 grms
Water :- 250 ml
Soya chunks :- 20-30 nos
Salt :- 3 tsp
Onions :- 1 large
Oil :- 2 tbsp
Bay leaf :- 1
Jeera (cumin) :- 2 tsp
Cloves :- 5-6
Black pepper :- 10
Cinnamon :- 1 (1-inch long)
Green chilly - 2 nos
Fresh green peas :- 100 grms
Methods
Wash and soak rice for half an hour.
Boil water and add salt. Remove from fire and drop in soya chunks for 15 minutes.
Cut onion into thick slice. Heat heavy bottom and add oil.
Add bay leaf, jeera, cloves, peppercorn and cinnamon. Once they splutter, add onions and green chillies slit and saute until onion turns light brown.
Squeeze out excess water from the soya chunks and along with fresh green peas, add to pan. Add salt and saute for 2 minutes.
Add salt and rice. Now pour water and let rice boil.
Once half the water is evaporated, turn the heat low and cover with tight-fitting lid.
Cook for another 8 minutes and turn off heat. Let it rest in this position for another 10 minutes.
Garnish with fried onion.
Serve hot with any curry and raita.
