Ingredients
Eggs :- 8
Onions :- 4 medium chopped
Tomatoes :- 4 medium chopped
Ginger :- 1 inch grated
Green chillies :- 4 chopped
Cumin/jeera :- 2 tsp
Turmeric powder :- 1 1/2 tsp
Red chilli powder :- 2 tsp
Salt to taste
Oil :- 4 tbsp
Fresh coriander leaves :- 2 tbsp
Onions :- 4 medium chopped
Tomatoes :- 4 medium chopped
Ginger :- 1 inch grated
Green chillies :- 4 chopped
Cumin/jeera :- 2 tsp
Turmeric powder :- 1 1/2 tsp
Red chilli powder :- 2 tsp
Salt to taste
Oil :- 4 tbsp
Fresh coriander leaves :- 2 tbsp
Methods
Break eggs into a bowl and add salt and whisk it.
Chop onions and tomatoes.
Heat oil in a pan, add zeera, once the zeera sparkles, add the turmeric, grated ginger and the onions and fry for a minute.
Now add green chillies, tomatoes, red chilli powder and salt, fry for 2 mins. till the tomato gets soft.
Then add eggs and stir well till it seperate into small pieces. Cook the eggs till the gravy gets dry.
Garnish with chopped coriander leaves.
Serve hot with parathas or rotis.
