Ingredients
Eggplant/Brinjal :- 3 medium cut in thin slice
Dahi ( Yogurt ) :- 2 cups
Green chilies :- 2-3
Curry leaves :- 7-8
Chilli Powder :-1 tsp
Cumin Powder :- 1 tsp
Panch Phutana :- 1tbsp
Sugar :-2 tbsp
Oil foy frying
Salt to taste
Dahi ( Yogurt ) :- 2 cups
Green chilies :- 2-3
Curry leaves :- 7-8
Chilli Powder :-1 tsp
Cumin Powder :- 1 tsp
Panch Phutana :- 1tbsp
Sugar :-2 tbsp
Oil foy frying
Salt to taste
Methods
Marinate the sliced brinjal in salt for 1-2 mins.
Blend the yogurt and keep in a serving bowl.
Heat oil in a pan and deep fry the sliced eggplant and keep it aside.
In a another pan heat 1 tbsp of oil and add phutana,green chilies and curry leaves and saute for a minute.
Add fried eggplant and sugar and stir it properly.
Now add this above to the yogurt and mix well.
Garnish with cumin and chilli powder.
Serve hot with steamed rice.
