Kadai Mushroom Curry is an exotic preparation of button mushrooms, capsicum, onion paste and tomatoes.

Ingredients
Mushroom - 200 gms
Capsicum - 1 medium (diced)
Onion - 1 medium ( chopped)
Tomato puree - from 3 tomatoes
Cumin - 1 tsp
Red chilli powder - 1/2 tsp
Coriander powder - 1/2 tsp
Garam masala powder - 1 tsp
Turmeric powder :- 1/4 tsp
Ginger garlic paste - 1 tbsp
Kasturi methi / Dried fenugreek leaves - 1/2 tsp
Oil - 2 to 3 tsp
Green Chillie - 1 chopped
Spice blend (cumin,coriander seeds,black pepper and dry red chilli) :- 1 tsp
Salt- to taste
Capsicum - 1 medium (diced)

Red chilli powder - 1/2 tsp
Coriander powder - 1/2 tsp

Oil - 2 to 3 tsp
Green Chillie - 1 chopped
Spice blend (cumin,coriander seeds,black pepper and dry red chilli) :- 1 tsp
Salt- to taste
Methods
Clean mushroom, slice it and keep aside.
Heat oil in a kadai, add jeera, allow it to crackle then add onions, saute till onions turn slightly brown.
Add ginger garlic paste and green chillies and fry for a couple of minutes.
Add tomato puree and saute for 3-4 minutes. Add salt, red chilli, coriander and turmeric powder and fry till oil starts separating from the masala.
Now add mushroom, stir it and cook it till the mushroom is done. Add capsicum, Simmer for 2 mins then add kasoori methi, coriander leaves and switch off the gas. It is very important that kadai mushroom curry must have medium thick consistency.
Now sprinkle some spice blend.
Garnish with coriander leaves and onion. Serve hot with roti, parathas.
