TIP: Fresher eggs are harder to peel. So if you want to make the peeling experience easier, try boiling eggs that have been in your fridge for a week or so. Never boil eggs. It makes them rubbery.
Place eggs in a heavy-bottomed saucepan and cover them with cold water. Make sure the tops of the eggs are covered by at least an inch of water. How much water will depend on the size of the pot, but in general, a bigger pot is better. Crowding the eggs risks cracking them.
Cover pot with lid and bring to a boil over medium heat. Bring the water to a full boil, then remove the pot from the heat and cover it. Let the pot stand untouched.
Large soft-cooked eggs: let stand in hot water 1 to 4 minutes, depending on your tastes.
Large hard-cooked eggs: let stand in hot water 15 to 17 minutes.
Remove the boiled eggs from the water and transfer them to a bowl of cold water for 15 minutes. Then either peel and serve or refrigerate.
Hard-boiled eggs are good cubed in salads, sliced in sandwiches, or simply eaten whole with Seasoned Salt.
